Lebanese Beef Skewers

Bold beef sirloin served over turmeric rice with a cool and creamy raita dipping-sauce made with fresh herbs. Great on the grill or in the oven.

Ingredients

Produce

  • 0.2 oz rosemary
  • 0.2 oz sage
  • 1 green bell pepper
  • ½ red onion
  • 2 oz arugula
  • 3 oz turnip
  • 8 oz tomatoes

Spice Mix

  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp ground ginger
  • ¼ tsp allspice

Proteins and More

  • 1 cup basmati rice
  • 1 lb sirloin
  • 6 oz greek yogurt

Pantry Items

  • 2 tbsp olive oil

1: Preheat oven or grill to 425ºF and line a baking sheet with parchment paper

2: Soak skewers and make marinade:

  • Soak wooden skewers in water while you prep the other ingredients.

  • In a large bowl, combine 2 tbsp olive oil and spice mix. Cut sirloin into 1” cubes and put in a bowl with marinade. Set aside while you start the rice.

3: Cook rice:

  • Rinse and strain rice. Place into medium saucepan with 2 ¼ cups of water and turmeric (small bag) over high heat. Bring to rolling boil, stir well, cover and lower heat to medium-low. Simmer for 18-20 minutes or until all water is absorbed. (Begin step 4 while waiting)

4: Cut vegetables:

  • Cut tomatoes into large chunks (big enough to be skewered).

  • De-seed and cut bell peppers into large squares.

  • Peel and cut ½ of onion in half, (save the rest for recipe C) Separate rings and cut into large squares.

  • Peel and cut turnip into large, bite size chunks. 

  • De-stem and finely chop rosemary and sage.

5: Cook skewers:

  • Slide sirloin, tomatoes, bell peppers, onion, and turnip onto skewers. 

  • Place onto baking sheet or heated grill and pour any leftover marinade on top. Sprinkle chopped rosemary and sage across skewers. Bake on middle rack for 15 minutes or until slightly browned. For extra browning, place under broiler in oven for 5 minutes.

6: Make raita and serve:

  • Combine yogurt with raita base and stir until evenly mixed. 

  • Divide arugula onto 4 plates and top with rice. Serve skewers individually or slide meat and vegetables off into a large bowl for family style. Use raita as dipping sauce. 

Chef Tips

Try to keep all of the items for the skewers the same size. It will help them cook more evenly and will be easier to eat.
