Honey Dijon Chicken

- 12 oz chard
- 1 lb carrots
- 3 cloves garlic
- 1 lemon
- Dijon mustard
- Fresh herbs - rosemary, thyme, parsley
- Black pepper
- Sea salt
Proteins and More
- 1.5 lb organic chicken thighs
- 2 tbsp olive oil
- ½ tsp sea salt
- ½ tsp black pepper
1: Preheat oven to 400ºF.
2: Prep veggies:
Wash and slice carrots into ¼” rings at an angle
Wash and destem chard leaves and slice into ½” ribbons
Peel and mince garlic*
3: Season and cook the chicken:
In a large bowl, whisk together marinade with zest and juice of the lemon. Slice each chicken breast into 3 pieces and add to the bowl, tossing to evenly coat the chicken.
Heat 1 tbsp olive oil in a large, ovenproof skillet over medium high heat. Add chicken and cook until well browned, about 4 minutes each side. Turn off the pan, add carrots and any remaining sauce from the bowl, stir well to coat.
- Transfer the pan to the oven and roast for 15-20 minutes, or until chicken is cooked through. Juices should be clear.
4: Meanwhile, cook the chard:
Heat 1 tbsp olive oil in a saute pan over medium heat. Add garlic and saute until soft, about 1 minute. Add chard, ½ tsp sea salt, and ½ tsp black pepper. Saute until leaves are bright green and soft.
Divide chicken, carrots, and greens onto 4 plates and serve.
Substitute chicken for chopped tempeh. Toss in marinade with carrots and roast at 400ºF for 25-30 minutes or until golden brown.
