Yukon, the golden potato

Potatoes have been a part of the human diet for over 10,000 years and originated in South America. Wild potatoes still grow in some parts of the Americas and they were introduced outside of that region only 400-500 years ago. Potatoes are now the 4th largest food crop, and more than 1/3 of the world’s potatoes are actually now grown in China and India.

They come in many shapes and sizes and are used in a variety of ways based on their flavor, texture, and starch content. Russet potatoes are commonly used for baking or frying, Yukon Gold potatoes are great for stews and mashing because of their creamy texture.

Yukon Gold is a large variety of potato most distinctly characterized by its thin, smooth eye-free skin and yellow-tinged flesh. This potato was developed in the 1960s at the University of Guelph in Ontario, Canada. Anthoxanthins are the compound which gives the gold potato its beautiful yellow color. These flavonoids are also found in onions, apples, and cauliflower.

A medium sized Yukon Gold potato contains 100 calories, a good dose of vitamin C, protein, and potassium. Due to their high carbohydrate content, potatoes are best enjoyed in moderation and in conjunction with other vegetables.
