Follow these basic steps and you can make a delicious soup without depending on a recipe:
1) In saucepan over medium heat, saute or “sweat” aromatics (onion, garlic, carrots, celery, herbs, and/or spices).
2) Cook meat, if using.
3) Add vegetables. Add roots like potatoes in first and save leafy greens like spinach until the soup is almost done to keep them bright.
4) Add broth or water. With longer cooking soups water will take on the flavors and become broth, otherwise, use a store-bought, organic broth.
5) Add any canned beans near the end to warm through. Cover and cook at a low boil until vegetables are tender.
Tips: Cook pasta separately and add to each bowl to avoid mushy leftovers; If using canned tomatoes add them with the broth; if using tomato paste, add 1-2 tbsp after sweating the aromatics.
