Pho

For those new to Vietnamese cuisine, think of pho as Vietnam’s answer to Japanese ramen, which has become one of the most popular Asian dishes, with noodle houses springing up all over the city.

While many ingredients are the same – bok choy, mushrooms, tofu – pho has a unique broth scented with cinnamon and star anise, and plenty of herby garnishes. Beef is the most traditional of the meat additions, but pork and chicken are suitable substitutes.
