Romesco sauce, aka “Salsa Romesco,” comes from Tarragona, Catalonia, in northern Spain. Many people call it the ketchup of Spanish cuisine. It is a fun, fairly easy sauce to make with the versatility of pesto. There is no standard recipe or ingredient list, but it is traditionally made with nuts, vinegar, oil and tomatoes or red bell peppers.
We are giving it a Lettuce twist this week by making a Green Romesco sauce, filling it full of roasted green bell peppers, green beans, and almonds. This combination adds to its nutritional profile, making it high in multiple vitamins, minerals, and protein.
It is great on any protein, perfect as a dip for grilled veggies, you could even use it as a pizza sauce!
